Executive Chef Nico Romo brings over 13 years of culinary experience to Fish, having worked with several esteemed international chefs from around the globe.

Romo, a native of Lyon, France, has been inspired to cook from a very young age. After graduating at the age of 15 from Helene Boucher Culinary Art School in Venissieux, France, Romo honed his skills through internships for two renowned Relais and Chateaux properties. He started at La Pyramide Hotel and Restaurant in Vienne, France, where he worked under Master Chef M. Henrioux. He later apprenticed at Restaurant Pierre Orsi in Lyon, France, under Master Chef M. Pierre Orsi.

After his 19th birthday, Romo caught the itch to travel abroad, so he proceeded to mail his resume to all 52 French Master Chefs that were working in the United States at the time. Master Chef Jose Gutierrez contacted Romo about coming to work for him at Chez Philippe in the Peabody Hotel in Memphis, TN, and Romo accepted. As Sous Chef at Chez Philippe, Romo had the opportunity to attend and cook for two James Beard house dinners honoring Chef Gutierrez, as well as manage the kitchen of the four-star, nationally acclaimed restaurant.

Following his tenure at the Peabody Hotel, Romo worked in the kosher kitchen of Chef Karen Blockman Carrier at Cielo in Memphis. He was recruited soon after by The Ritz Carlton, who had gotten wind of the French rising star and needed some talent for their hotel in Atlanta, GA. In the fall of 2001, Romo, who had been recently married, headed to Atlanta to take post as Sous Chef at The Café at The Ritz-Carlton.

Prior to joining the team at Fish in May 2007, Romo was recruited to open the third location of the B.E.D. restaurant concepts in downtown Atlanta, GA. Located inside Atlanta’s first luxury, boutique hotel, The Glenn, B.E.D., which has sister properties in New York and Miami, is known to attract celebrities for its contemporary blend of décor, cuisine and style. As Executive Chef, Romo was responsible for all food and beverage operations of the hotel, three-floor dining room and rooftop bar.

Susanna Ieronemo, Pastry Chef
With Susanna Ieronemo as Pastry Chef, Fish, for the first time in its history, offers an array of delectable and imaginative wedding cakes, as well as a seasonally-inspired menu of to-die-for desserts. An Illinois native, Ms. Ieronemo planned to study culinary arts at the Providence, Rhode Island campus of Johnson & Wales University. However, through a rather fortuitous miscommunication, she found herself studying in Charleston and has been here ever since. Prior to joining Fish, she was the Pastry Chef for Cordavi in Charleston, as well as Seabrook Island Club and Stephen Duvall Catering.


Jodie Battles, General Manager
General Manager Jodie Battles brings more than eight years of experience in the food and beverage industry with her to Fish. Ms. Battles came to Fish in June 2007 as Assistant Manager, and her enthusiasm and passion for food, wine and intuitive service led to her promotion to General Manager.

Born and raised in Barnstable on Cape Cod, Massachusetts, she began her food and beverage career at a high-volume seafood restaurant in Hyannis where she worked for nearly five years. Her college career began at the University of New Hampshire, until she came to Charleston in 2005 to visit her brother, a Citadel alum and fell in love with the Holy City. She soon relocated and graduated from The College of Charleston with a degree in Business Administration in May 2007.

Prior to joining Fish, Ms. Battles worked at a real estate development company in Mt. Pleasant as well as 11 Center Street Wine & Gourmet on Folly Beach. Ms. Battles’ bright personality and passion for local, fresh food have made her popular with Fish patrons and staff alike. In her spare time, you’ll find her cooking, boating, traveling or participating in any number of local charity races.

Jessica Kafer, Corporate Sales Manager
Jessica Kafer joined Patrick Properties Events as Corporate Sales Manager for The William Aiken House, The American Theater, Fish Restaurant and Lowndes Grove in January 2008. A Maryland native, Ms. Kafer has more than eight years of hospitality experience. Prior to joining Patrick Properties Events, Ms. Kafer was Group Sales Manager with The Inn at Palmetto Bluff in Bluffton, South Carolina. Previously, she worked with The Inn at Perry Cabin in St. Michaels, Maryland, part of the Orient-Express family and sister property of Charleston Place. As Corporate Sales Manager, she leads the charge to enhance relationships with in-state, regional and national businesses to build the special events, fundraisers and corporate meetings business.
